Ingredients:
2 cups cooked chicken, shredded and no skin
1 1/2 cups carrots, shredded
1 1/2 cups cabbage, thinly sliced
1/2 tsp salt
2 Tbsp olive oil
1 tsp curry powder
1/4 tsp chili powder
9 egg roll wrappers
cooking spray
Prepartion:
In large skillet over medium heat add olive oil
Add chicken, cabbage, carrots, salt, curry, and chili powder
Stir the mixture and cook for 8-10 minutes on low heat
Preheat the oven to 400 degrees farhenheit
Spray a cooking sheet with cooking spray
Lay one egg roll wrapper out flat and place 1/4 cup of the mixture on the bottom half
Roll the wrapper up according to the package and use water to make the egg roll wrapper stick
Place seam down on the baking sheet and top off with cooking spray
Place in oven for 8 minutes and remove
Flip the egg rolls and spray once more and cook for an additional 8 minutes
Serve with soy sauce or your choice of dipping sauce

You could use wonton wrappers but they won’t hold as much filling.
