quinoa crusted tuna

I’m not a cleaner.  I like things clean but I’m not one to scrub the entire house weekly.  In fact my best friend in the house is an IRobot roomba and it runs every other day.  The dirt accumulates so fast in our house that I gave up on having clean floors on a daily basis.

This past Friday I decided to use my day as a “cleaning day”.  I put aside all recipes that needed to be baked or cooked and brought out the cleaning supplies.

I mopped. I swept. I vacuumed.  The bathrooms even got a deep cleaning scrub down.  After cleaning multiple rooms I went outside to mow the front and back lawn.  (I actually enjoy mowing.)  Hours later I was so happy for my husband to come home and comment on the clean house.  Yes, I like affirmation on good things that I do.  It’s not like our house gets a deep cleaning very often.

For dinner I busted out the wine and this quinoa crusted tuna recipe.  I PROMISE there is no big news in our house just wanted to have a good day of cleaning and finish off my day with this lovely meal.  Friday was a good day all around.

Fast forward to Sunday evening……

We are about to leave for dinner and my husband is looking at the TV in our living room.  He casually asks me if I cleaned the screen in which I replied, “why, yes I did.”  He had the audacity to tell me that it actually looked better before I cleaned it.  HINT: If this is true NEVER tell your loved one that something looked better before they cleaned it.  That comment stung a little and he could tell immediately that I was taken back by it.

So, if you want to see a clean house please stop by because I won’t be cleaning for a while.  You can thank my husband for that one comment.  OK, I’m kidding and yes I did forgive him but he better be happy that he received this dish before he opened his mouth.

Quinoa crusted tuna with cauliflower puree

Cauliflower puree

  • 1 cauliflower head, cut into florets
  • 1 tablespoon salted butter
  • 1/4 cup shredded parmesan cheese
  • 1/2 teaspoon salt

  • 4.9 ounce box Near East Quinoa blend roasted red pepper and basil, plus ingredients on back of box
  • 1 teaspoon olive oil
  • 2 tuna steaks
  • salt for seasoning

Bring a pot of water to boil and add cauliflower.  Let them cook for 8 minutes and then drain.  Place in a food processor along with butter, cheese and salt.  Blend until smooth.

Cook quinoa according to package instructions.  Season the tuna with salt on both sides.  Heat a skillet with olive oil over medium heat.  Coat each side of the tuna with quinoa.  Pat down generously and place one side down on the skillet.  Sear for 1 minute and then flip and sear for an additional minute.

Place a spoonful of cauliflower puree onto a plate and top with seared tuna steak and additional quinoa.

*Some of the quinoa is going to fall from tuna while searing and that is just fine*
