If you love pretzels then you are going to love these tasty Mexican Stuffed Pretzels. It’s stuffed with bell pepper, taco flavored beef, onion and cheese.

As I sit at a table at my local coffee shop, I can’t help but stare at people when they come in. I literally could sit in a store, coffee shop, library or mall and just watch people for hours on end. It’s like you want to peek into their lives and get a glimpse of who they are. I honestly thought I would grab a cup of coffee and work for a couple of hours, but I find myself people-watching more than doing work.

I can keep secrets or family related things from close friends and family, but put me in a salon and I’ll babble anything away. Yes, I am one of those people. Salon gossip at its finest.

So, I sit here trying to type about Mexican Stuffed Pretzels why I ever so slightly ease drop on other conversations. However, I do have a funny story to tell you about this particular recipe. I’ve been wanting to make stuffed pretzels for a while and I finally got out the ingredients to make a Mexican version. After making them I laid them on the counter to cool off before sticking them in the refrigerator. Little did I know that I would go run errands, pick up kids and then come home 3 1/2 hours later to find the Mexican Stuffed Pretzels sitting on the counter. Panic settled in because they were supposed to be our dinner. I really wanted to eat them so I just needed some extra convincing on my end that I wouldn’t get anyone sick. Thanks to all my facebook friends out there who are fellow bloggers who said enjoy. I’m happy to report that two days later my family is healthy and still striving after eating that pretzel recipe.

Now to move on to the actual recipe itself. It’s taco flavored beef, shredded Mexican cheese, bell pepper and onion stuffed inside a pretzel ball. You can devour them right away or place them back in the fridge for leftovers. I see more stuffed pretzels in my future.

Mexican Stuffed Pretzels

Yield: 6 pretzels

Ingredients

For the Dough

• 1-1/4 cups warm water
• 3 tablespoons brown sugar
• 1-1/2 teaspoons active dry yeast
• 3-1/2 cups all-purpose flour
• 1/2 teaspoon salt

For the Filling

• 1 pound lean ground beef
• 1-ounce mild taco seasoning mix
• 1/2 cup diced yellow bell pepper
• 1/4 cup diced green bell pepper
• 1/2 teaspoon minced garlic
• 1 cup diced yellow onion
• 1/2 teaspoon salt
• 2 cups shredded Mexican cheese blend

To Boil Pretzels

• 3 quarts water
• 1/2 cup baking soda
• 1 1/2 tablespoons unsalted butter, melted

Instructions

1. In a mixing bowl, add water, sugar and yeast. Lightly stir the mixture and let it sit for 10 minutes.
2. Attach dough hook and slowly add flour and salt. Mix until dough is coming off the bowl edges and it forms a ball shape.
3. Remove the dough and place in a large bowl. Cover and let it rise for 1 hour.
4. Preheat oven to 425 degrees F.
5. Add beef, taco seasoning mix, bell pepper, garlic, onion and salt to a saute pan.  Cook until brown.
6. Remove sauté pan from heat and set aside.  Stir in the cheese.
7. Pinch off about 1/4 to 1/2 cup of dough and flatten it out into a circular shape.
8. Add 1/4 cup of the meat mixture and then fold all the edges in; creating a sealed pouch.
9. Repeat until all dough has been used.
10. Bring a large pot of water and baking soda to a boil.
11. Drop in 2 pouches at a time, allowing them to cook for 30 seconds. Remove and place on nonstick baking sheet.
12. Brush the tops of the pretzels with melted butter and place in the oven.  Bake for 10 to 12 minutes or until golden brown.
