Mexican salad in a jar


Many of you might be indulging in mexican flavors today for Cinco de Mayo.  I would and will never turn down a good mexican meal filled with some of my most favorite foods.

This past Friday my parents came into town to visit family and spend some time with their granddaughter.  About an hour after they arrived we loaded up into our vehicle and made our way to Abuelo’s for fajitas and margaritas.  Now my dad is a huge beer and whiskey drinker but when he offered to buy a pitcher of margs I was shocked.  My dad drinking a margarita over a beer?  It was definitely a shocker to me but hey I got a free drink from it or maybe two.

Now when I eat mexican food I always leave stuffed.  I say the same things over and over.

I ate too many chips.

I had too many margaritas.

I can’t believe I actually ate 2-3 tortillas plus my meal.  (Homemade tortillas are my weakness.)

Why do I do this to myself?  There is NO self-control when I’m at a mexican restaurant.  Hence why I needed to celebrate Cinco de Mayo but with a healthy Mexican salad in a jar.  If salads aren’t your thing please check out these other Cinco de Mayo recipes that are tremendous.

Mexican salad in a jar


3 cups lettuce
1 cup cooked corn
1/2 cup cooked black beans, drained
1/2 cup diced tomatoes
2 tablespoons shredded cheddar cheese
1/2 cup crumbled tortilla chips
6 cilantro leaves for topping


Divide the ingredients into half for two separate salad jars.

Place the following ingredients into the jar starting with lettuce, corn, black beans, tomatoes, cheese, chips and cilantro.

Put the lid on and store in refrigerator until ready to eat. Top with your favorite dressing and season with salt and pepper.

  10. What a fun fun lunch to bring to work. I thru my lunch time at my desk. Sometimes that can seem kind of grim, BUT one of these cuties would certainly be uplifting. Healthy and tastes good at the same time—my favorite combo.

  12. Do the tortilla chips get soggy after being in the refrigerator? Looks yummy, minus the corn, I don’t like corn.
