This past weekend I was in Galveston for a Girl’s Weekend while the guys hunted.  After fattening food and tons of wine I decided that I needed something healthy to eat this week.
A healthy alternative to mashed potatoes — Yes, please!
This recipe is so easy to make that anyone can do it.  Yes, even YOU can do it.
I love cauliflower!  Especially when you add butter and cheese to the mix.  This dish can easily replace your mashed potato recipe.  You can even decide if you want it chunky or smooth.  I prefer my cauliflower mash with a touch of chunk to it.  ENJOY!!!

Mashed Cauliflower


1 head of cauliflower
2 tsp butter
1 1/2 tsp olive oil
1/2 tsp salt
1/4 tsp pepper
cheddar cheese
green onions


Chop the cauliflower up without the stems
Place in a medium size pot and add just enough water to cover the cauliflower
Bring to a boil and cook for 15 minutes
Remove and drain and add to large bowl
Add butter, olive oil, salt and pepper
Mash with potato masher or puree with food processor
Plate and top with cheese and green onions
