My parents were in town this past weekend and I decided to cook fajitas for them.  Where I come from, you cant have fajitas without chips and guacamole.  I had my mom help me out with slicing all the vegetables for the dip and toppings for the fajitas.  This is a quick guacamole recipe that is going to leave the bowl empty.  ENJOY!

2 lg avocado
1 lime
1/2 cup tomatoes, chopped
1/4 cup red onion, diced
1 garlic clove, minced
sea salt to taste

Cut avocados in half and scoop out the mixture into a medium sized bowl
Cut the lime in half and squeeze the juice of each end on top of the avocado
Using a fork, mash the avocado
Add tomatoes, red onion and garlic
Stir the guacamole mixture and add salt

  2. I love guac. Avocados are one of my favourite things to eat I’ll eat them strait on toast with a little bit of salt and pepper. I always add tons of cilantro to mine!! Can’t have without!!
