Two weeks ago Shaun and I took a vacation to Lake Tahoe and had the best time in the mountains.  I mean who wouldn’t when its been such a Hot Summer in Texas! While we were there the hotel provided us with some homemade granola bars with chocolate on the bottom. They were absolutely delicious and left me wanting more. (Too bad Shaun ate his)  So coming home I was on the hunt for a granola bar recipe.There is a very talented food blogger named Jessica and her blog is How Sweet It Is and this is where I got the granola recipe.  I made some minor changes to the original recipe and I added a chocolate topping.  ENJOY!!!

Chocolate Granola Bars – adapted from How Sweet It Is

For the Granola

1 cup oats
1 cup rice krispies
1 cup salted pretzels, crushed
1/4 cup ground flaxseed
1/4 cup brown sugar
1/4 cup whole wheat flour
1/2 cup dry roasted peanuts, chopped
1 cup peanut butter
3 Tbsp butter, melted
2 tsp vanilla
1/3 cup honey
2/3 cup chocolate chip morsels
For the Chocolate Sauce
1 Tbsp butter
7 oz. heavy cream
12 oz. package of semi sweet morsels

Preheat oven to 350 degrees
In large bowl add all of the ingredients for the granola except the morsels
Stir the mixture with spoon or hands for about 5 minutes so that is moist and everything is well coated
Fold in the the chocolate chip morsels
Place in a 9X13 greased pan
Pat down the mixture into the pan so that it is packed in
Bake for 22 minutes or until golden brown on top
Remove to cool
For the sauce
While the granola pan is cooling heat a double broiler pan up to low/med heat
Add the butter and let it melt
Now add the cream and chocolate chip morsels and continue to stir until everything is melted and creamy
You may need to turn the heat to low so that the chocolate does not burn
Spread the chocolate out evenly over the granola and place in refrigerator until chocolate is solid
Cut into granola size pieces and serve
(Better when served chilled)
