Hand, foot, and mouth has officially struck our household. I was praying and wishing for a miracle that we would bypass this awful virus with our youngest. Unfortunately, he started showing up with bumps on Saturday. If you’ve had a loved one with hfm, you know just how bad it can get for the little ones. Weston can’t drink or eat because of all the sores in his mouth. Our house is filled with a Lysol/thieves spray combination… my candles are overpowered now.
Now is the best time to load up on healthy greens and some extra vitamin c provided by the mandarins. This Autumn Kale Salad with a homemade Mandarin Orange Vinaigrette is the perfect combo for extra nutrients. It consists of kale, sliced almonds, dried cranberries, mandarin slices and a homemade mandarin orange vinaigrette. You can also pair it with any vinaigrette of your choice, but this one is easy to make with only four ingredients needed.
Combine all salad ingredients into a bowl and set aside. For the dressing: Place all ingredients into a bowl/jar. Whisk and then pour over the salad.
