I’m finally back home!!!
I had such a relaxing time at home with my parents and I got to spend a lot of time with my nephew. While I was at home my mother made a cabbage dish that my sister had made for her the previous week. Both of them swear by this recipe by The Kitchn. Go check out the blog!
DELICIOUS recipe and of course the bacon just makes everything pop.
I enjoyed the recipe so much that I chose to make it for Shaun. By nature I added a few things like the pine nuts and balsamic vinegar. For some strange reason I am on a balsamic vinegar kick. So just be prepared to see it more in the future.
Roasted Cabbage with Bacon
1 head of cabbage
6 slices of bacon
1 Tbsp. pine nuts
Preheat oven to 450 degrees.
Peel off 2-3 of the outer layers of cabbage. Cut in half and then cut in half again and then repeat. You should end up with 8 small wedges. Lay some foil on a baking pan and top with the wedges. Sprinkle each cabbage with salt. Slice each bacon in half and then lay on the top of the cabbage.
Place in the oven for 25 minutes and then remove. Sprinkle the pine nuts onto the foil so that they toast. Place back in oven for 3-5 minutes or until everything is brown. Remove and drizzle each wedge with balsamic vinegar. Plate the wedges with a few pine nuts or chop everything up and place in large bowl.
