Hmmmmmm…… salads! Say hi to a very fresh salad that we enjoyed last night. We were getting a little tired with the same old salad from a bag so I put my creative hat on and put together something different for a change.
My mom used to make us kids a cucumber salad with dill, mayonaise, and red onion. However, I HATE mayonnaise with a passion. I can’t stand it when it touches my hands or fingers. Now when I make salads or try to recreate them I usually leave out the white stuff (mayo).
I just had to make my mom’s cucumber dill salad but made it with vinegar instead. Actually I used two different kinds: white wine and balsamic vinegar. I forgot to mention that this is super easy and quick to whip up.
ENJOY!
Combine all the ingredients in a medium size bowl.
Mix everything with tongs and stir in refrigerator until ready to serve.

Ironically, my mother always made the vinegar version and I didn’t taste the mayo version until I grew up. 🙂
