Now that Easter has passed it’s time to get back to grilled cheese month. I couldn’t leave everyone hanging with just one recipe this month to celebrate. In all reality I wanted to have a whole week dedicated to sandwiches but as you can tell time got away from me. Life happens.
This chorizo avocado grilled cheese is complete comfort food. Get on your stretchy black yoga pants and get ready for the ultimate bite. You might already have the pants on with all the left over Easter candy sitting around your kitchen. OK, I might be speaking just for myself. Thank goodness I’ve got a whole candylicious junkyard cookie recipe just waiting to be made with that candy.
I don’t cook much with chorizo, even with my love for Mexican food. It’s always chicken, beef or shrimp but this sammie just wouldn’t be the same with those meats. Chorizo HAD to be the stand out ingredient with avocado. You are also going to need a thick white bread and of course I prefer good ole’ Texas sliced bread. I mean come on it doesn’t get any better than that. Finish out grilled cheese month strong with this chorizo avocado grilled cheese sandwich.

Chorizo avocado grilled cheese
10 ounces pork chorizo
1/2 cup shredded cheddar cheese
3/4 cup shredded monterey jack cheese
1 large avocado, diced
6 slices texas bread
2-3 tablespoons butter
Add chorizo to a medium saute pan over low/medium heat. Cook for 7-8 minutes or until done. Remove from heat and set aside.
Mix both cheeses in a bowl.
Spread a little bit of butter onto one side of the bread. Place on a new skillet buttered-side down and butter the remaining side. Flip after the bottom-side is brown and then top one slice with chorizo, avocado chunks and cheese blend. Top with other slice of bread. Let it cook for an additional 1-2 minutes or until cheese is melted.
Repeat until all sandwiches are complete.
