Cool off this summer with a refreshing Watermelon Mint Spritzer. It’s the perfect mocktail to have on hand. This recipe was made in partnership with Pompeian Olive Oil.

It’s HOT! We are pushing daily temperatures upwards to 105 and it’s not even July or August. I’m truly afraid to see what those months have in store for West Texas weather or should I say dry heat.

If we are not at the lake trying to keep cool, you can bet that you will find me in my house trying to stay sweat-free in the AC. This Watermelon Mint Spritzer is also handy to have around when you are trying to beat the heat. I know that right now we constantly have a tub of watermelon ready to be gobbled up in a moments notice. The kids enjoy it and so do we, but I took it one step further by incorporating it into a drink that the whole family can enjoy.

I teamed up with Pompeian Olive Oil to use their Organic Apple Cider Vinegar with the mother for this Watermelon Mint Spritzer. Did you know that consuming two tablespoons of Pompeian’s Organic Apple Cider Vinegar with the mother a day will help improve digestion, boost the immune system, soothe sore throats, keep skin healthy and many more benefits? Straight apple cider vinegar may be too strong for some, so that is why I came up with adding it in with freshly squeezed watermelon juice and honey.

If you love apple cider vinegar as I do, I suggest adding a few more teaspoons to the overall mocktail. Add a pinch of mint leaves and a chunk of watermelon to the drink to step up the presentation.

Yield: 4 drinks
Prep Time: 30 minutes

Instructions

Place watermelon in a blender or food processor. Pulse on puree until you reach a water consistency (approx. 30 seconds). Strain the juice through a cheesecloth or mesh strainer. Pour juice into a bowl with a spout. Whisk in honey and apple cider vinegar. Add 2 mint leaves to the juice. Refrigerate for 15 minutes before serving. Add ice to a cup and then fill halfway with watermelon juice. Top it off with club soda and a toothpick with a watermelon chunk and mint leaf.
