I glance over at my iPhone to see that it says 2 o’clock in the freaking morning. My daughter has just climbed out of her bed and is banging on the door for her own rescue. All I want to do is close my eyes and pretend that we didn’t just convert her crib to a toddler bed. I’m thinking is it too late at night to put it back together, so she will sleep?

Sleeping toddler, sleeping parents.

I can’t put up with the crying at 2 am in the morning and I don’t think my husband can either. Yes we are total pushovers and this early in the morning she could ask for pizza and I would probably give it to her so that I can sleep. I hazily walk to her bedroom and pick up the wailing little 20 month old. She just might have a SMILE on her face saying gotcha.

I quietly put her next to me in MY bed and she is out. In the back of my mind, I’m thinking what did I just do? When did I become this parent and is she going to become complacent to this adjustment?

The next morning she is up perky because she got to sleep with her parents and I’m trying to find complete darkness under the covers. She rips them off my face and has the biggest smile of her life. I un-wrangle myself from the sheets, put on my seeing glasses and head over to the kitchen for the largest pot of coffee.

No hot coffee this morning. I’m going out full force and making a little treat for myself. Vanilla iced coffee frappe with a homemade vanilla whipped cream it is. Now give me a moment while momma drifts off to fantasy land.

Vanilla Ice Coffee Frappe

Vanilla Ice Coffee Frappe

Vanilla iced coffee frappe with homemade vanilla whipped cream

Yield: 2 frappes
Additional Time: 8 minutes
Total Time: 8 minutes

Ingredients

  • 2 cups heavy cream
  • seeds from 1 vanilla bean
  • 1/4 cup sugar
  • 4 scoops vanilla bean ice cream
  • 1 cup International Delight vanilla Iced coffee
  • 1 cup ice cubes
  • 1/3 cup 2% milk
  • caramel syrup

Instructions

Vanilla whipped cream
  1. In a large bowl combine all of the ingredients.  Using a hand held mixer blend on high for 4 minutes or until soft peaks form.  Cover and place in refrigerator until ready to use.
Frappe
  1. In a blender combine the ice cream, coffee, ice cubes and milk.  Pulse for about 1 minute or until most cubes are broken up.
  2. Pour the syrup into the bottom of a cup and onto the sides.  Pour the ice cream coffee mixture into the cup and top with a large spoonful of whip cream.
