For the past week things have been quiet on the blog, but far from quiet in the home. My five year old nephew has been staying with me and I’ve been keeping him and Livi quite busy with swimming, shopping, park visits and just good ole’ playing outside. This week I’m finally back in the kitchen or so I hope.

This past week when my parents brought him to our house we woke up on the weekend to make breakfast. Low and behold I surprised them with this Vanilla French Toast recipe. It’s a simple recipe and we don’t make it near enough, in fact French Toast gets made 2-3 times a year.

Now with a household filled with hungry guests you definitely don’t want to whip up a breakfast that takes an hour to make. From start to finish you can make 4 Vanilla French Toast in about 10 minutes.

10 MINUTES!!!

That means more conversation time when sitting around the table sipping away on coffee still trying to wake up. Forgot to mention that my nephew is still on his school schedule and wakes us all up at 6:45. I was definitely not used to this early WAKE UP CALL.

Vanilla French Toast

Yield: 3+ servings

Prep Time: 2 minutes

Cook Time: 8 minutes

Total Time: 10 minutes

Ingredients

• 3 large eggs
• 1 tablespoon Vanilla International Delight Iced Coffee (can also use creamer)
• 4 slices of Texas toast bread
• 2 tablespoons unsalted butter
• powdered sugar for topping

Instructions

Heat skillet on medium heat.

In a medium size bowl beat the eggs and vanilla iced coffee.  Soak each side of the bread in the liquid mixture.

Throw a small slice of butter into the warm skillet.  (Once butter sizzles, the pan is hot enough)  Place the soaked bread two at a time into the skillet.  Flip after 2 mins or until golden brown.  Repeat for each piece and then remove.  Melt the rest of the butter and repeat with the last two bread slices.

Sprinkle with powdered sugar.
