Tortilla chips with fish…. heck yea! Everyone else makes this recipe using tortillas, so I decided to spruce it up a bit.
I went to the store looking for regular tortilla chips and I ran into a bag of Tostitos tortilla chips with a hint of lime. These chips were perfect and I wouldn’t have to add any additional lime flavor. Also, I may have had a couple on the side just to make sure they would go with this dish.

Ingredients:
2 Tilapia Fillets
18-22 Tostitos Lime Tortilla Chips
1 Jalapeno, de-seeded and deveined
3/4 cup cilantro
1/2 tsp chili powder
1/4 tsp cumin
1/4 tsp onion powder
1 tsp seasoning salt
1 lg egg, beaten
Preparation:
Preheat oven to 375 degrees
In a food processor mix the following jalapeno, cilantro, chili powder, cumin, onion powder, and salt
Add the tortilla chips and mix until it comes out to be small chunks
Remove the mixture and place on a plate
Add the egg to a small dish and dredge each tilapia into the egg wash and coat each side
Place the tilapia in the chip mixture and pat the crumbs to the mixture to adhere to each side
Put both tilapias onto a nonstick baking sheet and cook 14-17 minutes or until fish becomes flaky
