When you think of the wine country, most people immediately shift their thoughts to Napa Valley. I’m even guilty of that assumption. However, I also live in what most would consider the West Texas Wine Country in Lubbock, TX. There are numerous award-winning wineries and vineyards that are starting to take over the area and some have been around for decades. You won’t find me complaining especially when wine is involved.

I’ve teamed up with Pompeian Olive Oil to bring you this fresh Tomato and Herbs in Rosé Vinaigrette Salad Dressing. I used their robust extra virgin olive oil along with a rosé wine to make this simple homemade dressing. Tomatoes are still going strong at local farmers markets and most people can go pick fresh tomatoes in their garden. I paired the tomatoes with fresh dill and thyme from the garden.

Tomatoes and Herbs in Rosé Vinaigrette Salad Dressing

Yield: 3 servings as side dish
Prep Time: 10 minutes
Total Time: 10 minutes

Ingredients

  • 1/3 cup Pompeian's Robust Extra Virgin Olive Oil
  • 2 tablespoons rosé (Burklee Hill)
  • 1/2 teaspoon minced garlic
  • 2 teaspoons Dijon mustard
  • 1 tablespoon Pompeian white wine vinegar
  • pinch of salt
  • 2 large tomatoes, sliced
  • 2 medium tomatoes, sliced
  • a few sprigs thyme
  • a few sprigs of dill

Instructions

In a jar combine olive oil, wine, garlic, mustard, white wine vinegar and a pinch of salt. Using a whisk to mix all ingredients together or top it off with a lid and shake. Place the tomato slices onto a plate with dill and thyme. Drizzle the dressing over the top.
