Tomatoes and Herbs in a Rosé Vinaigrette Dressing

When you think of the wine country, most people immediately shift their thoughts to Napa Valley. I’m even guilty of that assumption. However, I also live in what most would consider the West Texas Wine Country in Lubbock, TX. There are numerous award-winning wineries and vineyards that are starting to take over the area and some have been around for decades. You won’t find me complaining especially when wine is involved.

Tomatoes and Herbs in Rosé Vinaigrette Dressing

I’ve teamed up with Pompeian Olive Oil to bring you this fresh Tomato and Herbs in Rosé Vinaigrette Salad Dressing. I used their robust extra virgin olive oil along with a rosé wine to make this simple homemade dressing. Tomatoes are still going strong at local farmers markets and most people can go pick fresh tomatoes in their garden. I paired the tomatoes with fresh dill and thyme from the garden.

Robust Extra Virgin Olive Oil is perfect for marinades, pastas, and salad dressings. It provides a full-bodied flavor and is low in acidity. If you want to know if you are using the correct olive oil in your home while cooking.. check out Pompeians Olive Oil graphic.
