It’s hard to believe that Christmas has passed and we are quickly approaching New Year’s!

In my family we have a tradition like many others to eat Black Eyed Peas on New Year’s Day for good luck in the New Year. I think I’ve skipped out on the past couple of years just because I forgot to go to the store and get the peas. This year I planned ahead and decided to make a dip. I personally would rather have black eyed peas in something rather than eat them alone. My preference is to eat them with tortilla chips and make it an appetizer.

My mother prefers to cook the beans with ham and simmer them for hours. By no means am I knocking that method but I just love chips and dip.

Ingredients

  • 12 oz. cooked black eyed peas
  • 1 cup tomatoes, diced
  • 3/4 cup bell pepper, diced
  • 1/4 cup plus 2 Tbsp red onion, chopped
  • 1/4 cup cilantro, chopped
  • 1/2 lime, juice
  • 3 Tbsp olive oil
  • salt to taste

Instructions

In a medium size bowl combine all of the ingredients and stir with a spoon. Sprinkle generously with the salt. Store in refrigerator until ready to use. It’s best if it sits in the fridge for a couple of hours.

Serve with tortilla chips.
