I hope everyone had a very Merry Christmas. It was nice to take some time off to spend with family for my FAVORITE holiday. One week away from the kitchen and from social media, I can say that I haven’t done that in forever and it was much needed.

This past weekend I was back in the kitchen whipping up new favorites for the New Year. I’ve got healthy and comfort foods that the whole family will enjoy coming your way.

After a week of stuffing my face with holiday foods and beverages I decided to give my stomach a break with this fun strawberry granola yogurt parfait. It had been a while (years) since I’d made granola and it was so fun to experiment with this new batch.

After looking in my refrigerator for something healthy to eat I set out to make granola for this parfait. Since I bake a lot at home the ingredients were already in my pantry and this was going to be a win-win recipe for me. After the long break the last thing I wanted to do was venture to the grocery store.

My whole family, toddler included, loves yogurt and I especially like to incorporate it into recipes. I teamed up with Siggi’s for this yogurt parfait. With an array of yogurt selections at the store it’s nice to know that Siggi’s is made with simple ingredients and not a lot of sugar along with no artificial preservatives, thickeners, sweeteners, flavors or colors. Another positive is the fact it is made from only cow’s milk.

Strawberry granola yogurt parfait

Strawberry Granola Yogurt Parfait

Yield: 3+ servings
Prep Time: 5 minutes
Cook Time: 35 minutes
Total Time: 40 minutes

Ingredients

  • 1 cup old fashioned oats
  • 1 tablespoon light brown sugar
  • 1/4 teaspoon ground cinnamon
  • pinch of salt
  • 2 tablespoons honey
  • 1 tablespoon canola oil
  • 2 teaspoons vanilla extract
  • 1/4 cup sliced almonds
  • 3 Siggi’s strawberry yogurts
  • 5 large strawberries, sliced

Instructions

Preheat oven to 250 degrees F.

In a bowl combine oats, sugar, cinnamon and salt.  Stir until all sugar is broken up.  Stir in honey, canola oil and vanilla extract.  Mix until everything is well coated.  Spread out the granola on parchment paper on a silicone baking mat.  Bake for 3o minutes stirring at each 10 minute mark.  In the last 5 minutes add in the sliced almonds.

Allow the granola to cool for at least 10 minutes.

Place a spoonful of granola at the bottom of a cup.  Top with three sliced strawberries and a spoonful of yogurt.  Repeat the steps.
