The countdown to Super Bowl Sunday is quickly approaching and people are scrambling to find the right appetizers, pizza and beer choices. Yes, it’s all about the food, half time show and playing the square game each quarter to a win a little bit of money.

 

Do we even really watch the game? I couldn’t even tell you who is playing and who was in the playoffs. Are the playoffs even over?

 

It’s time to get back to the food and what I would serve if I were throwing a Super Bowl Party this next Sunday.

Now let’s start off with the appetizers like this spinach artichoke dip with bacon. First off it has bacon and second of all it is super easy to make with hardly a mess to clean up. It’s basically creating a dip by using a dip. It cuts down part of the process but still elevating the original spread.

I used La Terra Fina’s Artichoke and Jalapeno Dip and then just added a couple of my own favorite dip additions like bacon, spinach and cheese. You can always keep the original dip as is and just heat it up but there is no fun with that. Plus you get to tell all your guests about this amazing dip recipe that you put together. It’s best paired with baguette or pita style chips. However feel free to buy a bag of chips to help with the dipping or scooping too.

 

Along with your dip I recommend you have lots of pizza, chicken wings, sandwiches and plenty of beverages for your company. They will come hungry and ready to eat because who really watches the football game.

Spinach Artichoke Dip with Bacon

Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes

Ingredients

  • 4 strips baked bacon
  • 10 ounce container chunky artichoke and jalapeno spread (used La Terra Fina)
  • 1 packed cup fresh spinach
  • 1/4 cup light mayonnaise
  • 2 tablespoons light sour cream
  • 3/4 cup shredded cheddar cheese

Instructions

Preheat oven to 400 degrees F.

Chop up the bacon and place in a large bowl.  Add the rest of the ingredients and stir until well combined.

Place in a medium size baking dish and bake for 10 minutes.
