Skillet Huevos Rancheros

Spice up your breakfast with this fun new dish of Skillet Huevos Rancheros. This recipe has corn tortillas, jalapeno hummus, chorizo, eggs, and other great toppings.

You know when you walk out of a restaurant not remembering the great conversation but just reminiscing about the heavenly meal that you just devoured. I leave most restaurants with this desire for more of that amazing dish or wanting to remake it at home. This is where this Skillet Huevos Rancheros dish comes to mind.

I’ve taken many trips this summer, but one restaurant on vacation left me with a hankering for more breakfast dishes. It’s the type of breakfast that’s so filling that you are begging your stomach to make room for the rest of it.

Huevos Rancheros is the perfect dish that compiles all of my favorite flavors into every single bite. However, I decided to switch it up a bit with this recipe and add a little different flair to my new favorite breakfast option.

A month ago, I traveled to Portland, VA, to learn about the great products Sabra had to offer. It was definitely an experience for the books and one that I’m proud to have been a part of it. After taking a trip to their advertising agency to meet their LEAD team, we took off to the Sabra hummus plant. Now I see factories/plants all the time on the side of the road and have even been to a couple of them. Let’s just say that this one blew them all out of the water. It was more eclectic and looked more like a leading magazine office in New York when you walked into the doors. There were glass windows, a small store to grab Sabra products, a full chef’s kitchen where they do all the testing, conference rooms, a cafeteria and a fun, relaxing room with faux grass for their employees.

We had tons, and I mean tons of hummus to sample, which included their new Rosemary with Sea Salt and Caramelized Onions flavors. I immediately fell in love with the caramelized onion one and may even prefer it over my beloved Pine Nut Hummus.

We were able to ask questions with their lead Chef, MaryDawn Wright, in the Test Kitchen and even were able to make our own flavored hummus. Go figure that I would choose to go the Mexican flavored route. PS – The judges LOVED it!

I decided that I wanted to use Sabra’s Jalapeno hummus for this recipe instead of refried beans. It was a great substitute, and I foresee myself making this new switch more often with recipes.

Skillet Huevos Rancheros

Yield: 3 - 4 servings
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes

Ingredients

  • 9 ounces pork chorizo
  • 4 large eggs
  • 3 tablespoons milk
  • 1/4 cup Sabra Jalapeno hummus, divided
  • 3-4 corn tortillas
  • pico de gallo
  • Sabra salsa
  • 2 tablespoons shredded Mexican cheese blend, divided

Instructions

In a skillet over medium heat add chorizo and cook for 6-8 minutes.  Drain the excess grease from the skillet and set chorizo aside.

In a bowl whisk together eggs and milk.  Add to skillet over low heat and scramble.

In an iron skillet over low heat add corn tortilla.  Spread hummus over the top of the tortilla.  Top with chorizo, eggs, pico de gallo, salsa and shredded cheese.  Serve in iron skillet.
