With the hustle and bustle of the summer days flying by so quickly, I finally made some time for myself in the kitchen to bake. I don’t bake much but when I do I find it to be a stress reliever. Well that is the case when the recipe works out and it’s edible. Believe me there are plenty of failed recipes.

Peaches are in season and lately I’ve been all about them. I’ve wanted to make a skillet apple crisp for quite some time, so I left the peaches on the counter and turned to my beloved apples. Nothing beats a warm crisp that just came out of the oven with a scoop of vanilla ice cream sitting on top. Now I’m not big on cobbler dishes but this one is different and more up my alley. Not to mention that it’s easy to throw together and you let the oven take care of all the baking.

If you had guests over you could take it out of the oven and throw a couple more scoops of ice cream on top and hand out the spoons. Let them do the digging in the skillet to make it more of a team effort.

This apple crisp is also the perfect dessert to enjoy with a nice cup of coffee or iced coffee if you prefer. One of those desserts that you want to enjoy in silence and run your finger along the bowl to make sure that every crevice has been licked clean of all its glory. Remember it’s all about taking at least 10 minutes #IDelightIn10 for yourself each day.

Skillet Apple Crisp

Ingredients

  • 3 granny smith apples, chopped
  • 2 tablespoons lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup light brown sugar
  • 1/4 cup sugar
  • 1 cup chopped pecans
  • 1/4 cup International Delight
  • Vanilla Iced Coffee
  • 3/4 cup flour
  • 1/2 cup light brown sugar
  • 1/2 teaspoon salt
  • 8 tablespoons unsalted butter

Instructions

Preheat oven to 350 degrees F.

In a large bowl combine apples, lemon juice, cinnamon, both sugar and pecans.  Mix with your hands to make sure apples are covered with mixture.  Pour into a buttered iron skillet and top with Vanilla Iced Coffee.

In a separate bowl add the topping ingredients.  Using a pastry blender start to crumble up the mixture.  Spread it out over the apples and bake in the oven for 35-40 minutes.  Then broil for at least 1 minute.

Note: I recommend serving warm with ice cream on top.
