My answer to the question above would be both and tonight is going to be a chicken night!
I have mentioned before that I have several blogs that I follow on a daily basis. Just recently I started to follow Bev from Bev Cooks. She is a member of the Tasty Kitchen and that is where I found this amazing chicken recipe.
Chicken, wine, and herbs…. Yes please! Feel free to drink the extra white wine with your meal. ENJOY!
Simple Roasted Chicken
Adapted from Bev Cooks Ingredients:
1 whole chicken, cut up
2 Tbsp olive oil
1/4 cup white wine
2 sprigs rosemary
2 sprigs thyme
2 tsp salt
2 tsp pepper
Preparation:
Preheat oven to 450 degrees
Pour the olive oil into the cast iron skillet and coat with a paper towel
Place all of the chicken into the pan and top with wine
Spread out the herbs over the chicken
Sprinkle the salt and pepper all over the chicken
Cook for 40 minutes and then switch it to broil for 5 minutes
