Ideally, my breakfast would consist of bacon, bread, egg whites and hash browns. Sounds a lot like the typical All-American Breakfast. Now I’m being realistic because this breakfast comes around maybe once or twice a month if I’m lucky.

Most days involve a toasted bagel smothered with butter and two or three cups of coffee. Kids are busy devouring their pop-tarts or begging for a drive down the road for donuts. On the weekends we eat pancakes/waffles with bacon and eggs. However, every once in a while I like to switch things up for the gang. I decided to have a little fun with a loaf of bread that I had sitting on the counter.

This isn’t your typical breakfast, but these Sausage Breakfast Boats add some of your favorite items like sausage, eggs, cheese and green chilies. You can omit the green chilies and add one of your favorite breakfast toppings.

If you want more of an eggy texture, just add two more eggs to the mixture. I was afraid that the kids wouldn’t eat it if they saw just eggs and sausage. (They are not the biggest fans of my quiches.) You can even pre-toast your bread loaf in the oven for 3-5 minutes before adding the egg and sausage mixture. That just allows the batter to sit instead of the bread soaking up every bit of the egg mixture.

Sausage Breakfast Boats

Ingredients

  • 1 pound Owen’s Natural Sausage
  • 4 large eggs
  • 3 tablespoons milk
  • 1/2 cup shredded mild cheddar cheese
  • 4 ounce chopped green chilies
  • 1 loaf French Country bread

Instructions

Preheat oven to 350 degrees F.

Add meat to a skillet and cook until brown on medium heat. Remove and set aside.

In a bowl combine eggs, milk, cheese and green chilies. Stir in the sausage. Using a serrated knife create a deep “v” into the bread and remove the top as well as the bread inside. Pour the sausage and egg mixture into the bread. (You may not use it all)

Place on a baking sheet and bake in the oven for 30-35 minutes.
