Say hello to the wonderful world of cheese balls. No seriously they are one of life’s greatest things because cheese is involved. Cheese is a lot like bacon and one can never have too much of either. Well you can but that’s not the point here.

 

Parties need to have cheese whether it comes in chunks or in the form of a cheese ball. Don’t let these masters of art scare you because they are super easy to make and you really can make different flavor combos.

 

Today I’m all about the salted caramel cheese ball. Too many people are scared to involve chocolate with savory but once again I’m here to prove my point that it just WORKS. After making crab cakes and a spice rub with chocolate it was time for me to involve it with cheese.

Brownie brittle

Now this can be a sweet appetizer or you can also put it down on the dessert table. The choice is all yours… no really it is. The salted caramel comes from the crushed brownie brittle crumbs that I used for the outside coating.

 

Oh and next month I’ve got even bigger plans for chocolate and cheese…. You just wait and see.

Chocolate cheese ball

Salted caramel cheese ball

Salted Caramel Cheese Ball

Yield: 1 cheese ball
Prep Time: 10 minutes
Additional Time: 30 minutes
Total Time: 40 minutes

Ingredients

  • 14 ounces cream cheese, softened
  • 1 teaspoon butter flavor
  • 1 tablespoon light brown sugar
  • 2 teaspoons vanilla extract
  • 1/4 cup powdered sugar
  • 1/8 teaspoon salt
  • 1/2 cup semi-sweet chocolate morsels
  • 2 ounces Brownie Brittle salted caramel

Instructions

In a food processor or a large mixing bowl blend the cream cheese, butter flavor, sugar, vanilla, powdered sugar and salt.  Remove the cheese and place in the center of wax paper.  Slightly roll the cheese mixture into a ball and place in the refrigerator for 30 minutes to harden up.

In a food processor blend the morsels and brownie brittle.  Pulse until almost fine consistency.

Remove the cheese ball and roll into a ball with your hands.  Then roll the cheese ball into the chocolate mixture.

Serve cold with brownie brittle or pretzels.
