It’s hard to believe that in a little over a week, we will be sitting down with our family members carving into a Thanksgiving turkey. There will be endless amounts of food, beverages and a ton of laughter to go around the table. After that we may be putting on our lounge pants and curling up with a blanket to watch some football. You may have other plans but I’m thinking that is exactly what I’ll be doing this next week.

Before I get ready for the BIG MEAL I’ll be snacking on these healthy Ranch Roasted Chickpeas. They’ve been a favorite of mine for years and I finally decided to remake them again for the site. The preparation time takes only about 2 minutes and then you let the oven finish it off. You end up with a crunchy little chickpea with a hint of ranch seasoning.

Ranch Roasted ChickpeasI made them this past week and let the kids try them for an afternoon snack. Honestly, I wasn’t sure how they would take to them. All three silver containers were emptied out and they were requesting more. That’s one snack that I don’t have a problem with them asking for more. These would be great for road trips or any gatherings that you may have at your house. I can’t wait to whip up a couple more batches with some fall spices.

Now, it’s off to eat some of these Ranch Roasted Chickpeas before the kids realize I made another batch.

Ranch Roasted Chickpeas

Ranch Roasted Chickpeas

Ranch Roasted Chickpeas

Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes

Ingredients

  • 1 15oz. can Chickpeas, drained
  • 1-2 teaspoons olive oil
  • 1 1/2 Tbsp. Ranch seasoning (dry)

Instructions

Preheat oven to 400 degrees F.

Rinse and drain the chickpeas and lay out on paper towels. Pat them gently all over with paper towels and then let them air-dry for at least 5 minutes. Start to remove the outer skin from the chickpeas.

Place chickpeas on a baking sheet and drizzle with olive oil and make sure they are all coated.  Roast in oven for 30 minutes shaking them up halfway through the cooking process. Remove from oven and place in a bowl. Pour in the ranch seasoning and toss until everything is coated.
