When you go to the store do you get a bunch of items and then when you get home and are trying to make a recipe or meal you feel like you have NOTHING! I or we feel like that ALL THE TIME. Shaun gets so mad because I will buy stuff to make a recipe but won’t think about what sides will go with the main meal.

Well since I signed up for  ZipList and Shaun has access to my account we are in NO NEED for food around our house. I told him I actually feel like we have too much!

The other day I decided to make a nice fish recipe since I haven’t made one in a while. I saw a recipe floating around for pretzel crusted chicken and I thought why can’t you put it on fish. I didn’t want it to be just pretzels so I mixed in some crushed walnuts as well for added flavor.

Shaun was so pumped that I chose halibut to make this dish. I found out that it is his favorite type of fish. (WHO KNEW)  I know why I don’t normally buy it because it’s a tad bit expensive, but with it being close to Valentine’s Day I felt like splurging. I was really impressed on how this pretzel-walnut crusted halibut turned out and plan on making it the next time we have company.

Pecan-Walnut Crusted Halibut

Pretzel-Walnut Crusted Halibut

Yield: 2 servings
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

Ingredients

  • 7-8 oz. Halibut
  • 10 pretzel rods or 1 cup crushed pretzels
  • 1/3 cup walnuts
  • 1 1/2 tsp lemon pepper
  • 2 Tbsp butter
  • salt to sprinkle

Instructions

Preheat oven to 450 degrees.

Add pretzels and walnuts to a food processor and blend until they are small crumbs. (If you don’t have a food processor you can crush the mixture with a rolling pin in a ziplock bag.) Empty the crumbs into a small bowl and add the lemon pepper.

In a sauce pan add 1 Tbsp of butter and melt it over medium heat.

In another bowl add the other 1 Tbsp of butter and put in the microwave until melted about 15 seconds.

Pat the halibut with a paper towel on both sides. Sprinkle both sides with salt. Brush both sides of the halibut with the melted butter. Pat down both sides of the halibut generously with the pretzel walnut mixture.

Put it into the sauce pan and cook for about 45 seconds on each side just to get a good sear. Place in the oven for 8 minutes flipping half way through the cooking time.

Serve over rice or greens.

*Cooking time may vary ~ Cook in the oven for 10 minutes per 1/3 inch thickness*
