Fall just happens to be my favorite season. The weather is cool and crisp, football season, tailgating, birthdays and school is back in session. I thought my life was going to calm down once the kids went back to school. One week in we had a sick household that wiped out everyone for a full week. Talk about mom guilt trying to explain to your boss that the kids are sick yet again.

Work has been going well. It’s busy and is always changing, but I love doing something different on a weekly basis. I’ve also decided that I finally needed to shed the “so-called” baby weight that is not from the now toddler. Two weeks ago I started a low-carb, sugar-free, calorie counting weight management program. For the most part, it is simple but now and then I crave a warm slice of bread with butter on it. I’m hoping to feature some of the recipes that I’ve been making that fill this new sort of lifestyle.

Pomegranate Apple Cider Vinegar Drink

Yesterday, was my relaxing day. I was back in the kitchen and planning our weekly meal schedule. I also set aside some time to make this Pomegranate Apple Cider Vinegar drink. Consuming two tablespoons of Pompeian’s Organic Apple Cider Vinegar with the mother a day will help improve digestion, boost the immune system, soothe sore throats, keep skin healthy and many more benefits. Straight apple cider vinegar may be too strong for some, so that is why I came up with adding it in with some pomegranate juice and honey.

Now it’s back to the busy schedule and diet. I’ll keep you posted on how it’s going.

Pomegranate Apple Cider Vinegar Drink

Pomegranate Apple Cider Vinegar Drink

Yield: serves 2

Ingredients

  • 1/4 cup Pomegranate Juice
  • 2 tablespoons Pompeians Organic Apple Cider Vinegar with the mother
  • 1 tablespoon honey
  • 1 1/2 cups water
  • frozen or fresh pomegranate arils

Instructions

In a small pot on low heat add all of the ingredients and whisk them together. When the pot gets warm (2-3) remove from heat. Pour over ice and serve. Top with pomegranate arils
