Yesterday marks Day 1 of my unofficial start of my new healthy eating plan. Ever since I stopped nursing Little O my weight has either stayed the same or fluctuated upwards. What a major disappointment since it’s the start of Summer and I am not comfortable in a swimsuit. Right now I have to suck it up because Olivia likes to be outside and play in the water.

A while back I noticed a couple of other bloggers talking about NatureBox. I checked out the site and decided to try them out. It’s habit of mine to check out delivery boxes because I hate to run errands especially with a baby. When NatureBox contacted me about doing a giveaway I replied back immediately with a BIG FAT YES. I told them that I was already receiving the monthly boxes but would love for someone else to be able to try them out.

We receive the deluxe package where 5 snacks come each month. When the box arrives we are usually fighting over each snack. Lately we have been traveling almost every weekend and its been nice to throw these packages into the car and have something to snack on while we travel. My parents even fell in love with the snacks to where they now receive the deluxe package as well.

What I love about my NatureBox shipment.

This month we received some plantains with sea salt in our shipment. Immediately I knew that I wanted to make a ceviche using the plantains as the chips. Healthy right?!? Yes and they went with the pineapple shrimp ceviche perfectly.

Pineapple Shrimp Ceviche

Pineapple Shrimp Ceviche

Yield: 4-6 servings
Additional Time: 20 minutes
Total Time: 20 minutes

Ingredients

  • 2/3 cup red onion, diced
  • 1 jalapeƱo, finely chopped
  • juice from 1/2 lime
  • 1/4 cup cilantro, chopped
  • 1 cup pineapple, chopped
  • 1 avocado, diced into small chunks
  • 1 1/4 cup boiled shrimp cut in half, peeled and deveined
  • season with salt
  • plantains

Instructions

Place the first 8 ingredients into a bowl and stir.
Serve in a pineapple or mixing bowl.
Best served with plantains.
