Brrrr…. it got cold again in Texas. One day it’s 80 degrees and then the next day it is in the 50s. It was also very windy last night and the power kept going off and on. It normally wouldn’t bother me but when you have 2 fans going in your room it can get real quiet real fast. I love the sound of a fan and it definitely helps put me to sleep.

No fan is basically no sleep for me.

I will say that I was really hoping for a White Christmas this year, but the forecast is just showing rain. Not quite what I had in mind but I’ll take it.

Since I did wake up to a cold, windy day I decided to make myself some Hot Chocolate. I can’t even tell you the last time I even had hot chocolate at home. It was probably at a football game in college where I treated myself to a hot chocolate drink.

Wow that really has been a while. With it being so close to Christmas I had to add a little peppermint flavor making it peppermint hot chocolate.

Peppermint Hot Chocolate

Peppermint Hot Chocolate

Yield: 1-2 servings
Prep Time: 3 minutes
Cook Time: 10 minutes
Total Time: 13 minutes

Ingredients

  • 1/4 cup cream
  • 1 Tbsp sugar
  • 1 1/4 cup whole milk
  • 1/2 tsp vanilla
  • 1/2 tsp cocoa
  • 1/4 cup semi-sweet chocolate chip morsels
  • 1 Tbsp Andes Peppermint Baking Chips
  • Toppings: marshmallows, candy cane

Instructions

Add cream, sugar, milk and vanilla to a small sauce pan over medium heat and bring to a boil.

Remove from the heat and add cocoa, morsels and peppermint to the saucepan.

Whisk until everything is melted and smooth.

Pour into mugs and top with marshmallows and a candy cane.
