It’s Monday, November 17th the year 2014 and I’m officially turning myself in for decorating for Christmas before Thanksgiving. Christmas is BY FAR my favorite holiday of the year and I would break out the décor in August if I could. Don’t get me wrong I love Thanksgiving and what it is all about but this year my daughter’s birthday falls on this holiday and I really want to separate them.

Maybe I’m just trying to find an excuse to bust out the red and green. I hate that we only get to keep up the decorations for a month; I would totally be THAT neighbor who kept everything up year round.

Yes, that would totally be me. Don’t worry guys I take down my tree, lights and decorations right after New Years.

With all this Christmas talk it’s time to talk about my holiday favorites for this time of year. Edible gifts (especially if they involve chocolate), bath and body works holiday candles, apple cider and wait for it… International Delight’s holiday flavors.

You know how I love my ID and I was beyond ecstatic when I saw their holiday line in the grocery store about two weeks ago. If they can come out early with their Christmas stuff, then surely I can too.

For the past week I’ve been sipping away on my chocolate peppermint truffle creamer and decided that chocolate and coffee work so well together that it was time to make some fudge.

Peppermint chocolate fudge in fact. It pairs nicely with a hot cup of coffee or an afternoon snack. Box it up and give it as a gift to neighbors for the holidays.

Now I’ve got to go eat some fudge. PS…. There eggnog is also out in stores.

Peppermint Chocolate Fudge

Ingredients

  • 1 cup powdered sugar
  • 1 tablespoon light corn syrup
  • 2 tablespoons peppermint chocolate truffle International Delight
  • 2 teaspoons canola oil
  • pinch of salt
  • 14 ounce can sweetened condensed milk
  • 1/4 teaspoon salt
  • 1 teaspoon peppermint chocolate truffle International Delight
  • 3 cups semi-sweet chocolate chip morsels

Instructions

In a large mixer combine all of the ingredients for the peppermint patty.  Mix 5 minutes on medium speed until you have a soft fluffy mixture.

Add all ingredients for the fudge to a double broiler.  Keep mixing until melted.  Pour chocolate into a 8×11 baking dish lined with wax or parchment paper.  Add the peppermint patty mixture to the top and swirl it in with the fudge using a butterknife or toothpick.  Place in the refrigerator to set for at least 2 hours.
