Peanut Butter Chicken Skewers

It’s the last and final week for the H-E-B Meal Maker Challenge. Our main ingredient was Natural Peter Pan Creamy Peanut Butter. After a long deliberation with Shaun I decided to make some chicken skewers with a peanut butter sauce. I know these sauces are very common but I was wanting to make one on my own.

Also, with this recipe needing to be less than 7 ingredients I needed to chose all of the ingredients for this recipe wisely. This sauce came out very think but I actually preferred it like that in the long run. We were skeptical with the flavor of chicken and peanut butter but we are NEW fans.

I hope you are enjoying you long Holiday weekend with family and friends. We are in central Texas with my family grilling out and spending some much needed quality time. If you are needing a nice meal for your next grilling event you will need to try out these skewers. They are great being paired with vegetables.

Peanut Butter Chicken Skewers

Peanut Butter Chicken Skewers

Yield: 5-6 skewers
Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes

Ingredients

  • 1/2 cup Peter Pan Creamy Peanut Butter
  • 1/4 cup soy sauce
  • 1 Tbsp brown sugar
  • 1 tsp garlic, minced
  • 1 tsp fresh ginger
  • 2 red bell peppers, cut into large chunks
  • 3 large chicken breasts
  • salt to season

Instructions

Preheat the grill to medium/high heat.

Cut the chicken breasts into 1 inch cubes and sprinkle lightly with salt.

Cut the bell pepper into large chunks and set aside.

In a medium size bowl add the peanut butter, soy sauce, brown sugar, garlic and ginger. Mix with a hand held mixer. (Batter should be thick) Place the chicken into the batter and mix thoroughly with your hands until it is well coated.

Using skewers place the chicken cube on first followed by the bell pepper chunks. Repeat until you have 5 pieces of chicken with 4 pieces of bell pepper.

Use olive oil or cooking spray to coat the grill grates. Place the chicken skewers onto the grill and cook 7-8 minutes and then flip the skewers and cook for an additional 7-8 minutes.
