Peanut butter Cereal Treats

I remember traveling to my grandmother’s house at a young age and having a table full of baked goods waiting for me when I arrived. My grandmother loved to cook and even published three cookbooks on her own. One of the desserts that I remember fondly were the no-bake cornflake candy. Anyone remember these easy treats?

Of course I decided to take a different spin on this traditional candy by making them like a rice krispie treat. Since I wanted them to resemble rice krispies I decided to throw in a couple along with some chocolate. You can never go wrong with adding chocolate to a recipe.

Don’t tell my grandma that I like these peanut butter cereal treats more.

Peanut butter Cereal Treats

Peanut Butter Cereal Treats

Yield: 15-20 servings
Prep Time: 15 minutes
Total Time: 15 minutes

Ingredients

  • 1 cup light corn syrup
  • 1 cup sugar
  • 1/2 tsp vanilla
  • 18 oz. peanut butter, creamy
  • 3 cups Special K Original Cereal
  • 3 cups rice krispies
  • 1 cup mini semi-sweet chocolate chips plus extra for topping

Instructions

Add the syrup and sugar to a saucepan and bring to a boil. Cook for 2 minutes at a boil, stirring constantly. Remove from the heat and place in a large bowl.

Stir in the vanilla and then add peanut butter, Special K and rice krispies. Mix everything until it is well coated. Sprinkle in the chocolate chips and continue to stir.

Coat a casserole dish with non-stick spray or butter and then pour in the cereal mixture. Using a spatula make sure it goes into all creases and press down lightly to ensure it sticks together.

Sprinkle a couple more chocolate chip morsels on the top and let it cool for 2-3 hours before slicing.
