Lazy days!
On my lazy days I like to lounge in my stretchy pants with a blanket and watch movies.  Well, Sunday was my lazy day.  Christmas tree lights on, stretchy pants on, and stew slow cooking over the stove is the best part of my non-productive day!  I think our dogs love lazy days just as much as we do.  This recipe was inspired from a Southern Living Cookbook.

2 lbs. beef stew meat
1 Tbsp canola oil
1 1/2 cups water
1 lg onion, sliced
1 garlic clove, minced
1 bay leaf
2 tsp salt
1 tsp Worcestershire sauce
1/2 tsp paprika
1/2 tsp ground pepper
3 carrots, quartered
3 potatoes, peeled and cubed
1/2 lb boiling onions (instructions on these at the bottom)

Add stew meat to large dutch oven with oil and brown
Add the next 8 ingredients bring to a boil
Then reduce heat to a simmer
Cover and cook for 1 1/2 hours and stir occasionally
Then add carrots, potatoes, boiling onions and cook for an additional 30 minutes
Remove bay leaf and then serve

Serves: 7

*Boiling onions ~ Bring a small pot of water to boil add whole onions; cook for 3 minutes and then place them in a cold bowl of water; let them sit in the water for a couple of minutes; remove from water slice the ends off and squeeze the onions so that they pop out of the outer layer of the onion
