You know what I love????
Lazy weekends with my husband and two dogs. I mean we didn’t do anything on Saturday except watch tons of movies and Sunday I baked and watched more tv (football). I’m sure our dogs loved that we stayed at home and lounged around because that means they can lounge around with us. Wait… they do that already every day!!!
I decided that I wanted an easy to do recipe to go along with my theme of a lazy weekend. A while back I made granola bars and this time I wanted to switch it up and make no bake granola bites. The difference in this recipe is that there would be NO BAKING!
QUICK and EASY RIGHT!
These bites don’t have to be stored in the refrigerator but I HIGHLY recommend it since they are WAY better cold. Hope you had a lazy enjoyable weekend too!
In a microwavable bowl add the peanut butter. Place in the microwave and heat for 30 seconds or until melted. Stir in the syrup and vanilla and set aside.
In a large bowl add the granola, oats, rice krispies and chocolate chip morsels. Mix everything up with your hands and then slowly stir in the peanut butter mixture. Using your hands mix everything up so that is well coated with the peanut butter.
Refrigerate the mixture for at least 20 minutes and then using a spoon or cookie scoop start to make little balls of the mixture. You will need to use your hands to ensure that the ball is well compacted so that it does not fall apart. Lay the balls onto the parchment paper.
Store in an airtight container in the refrigerator.
