The school year is winding down for us and I can’t say that I’m all that thrilled about it. Yes, I said that. I look forward to getting work done and having a little peace and quiet every few hours. With three kids home that means more yelling, more fighting and more children screaming, “mom”. 

As I prepare for kindergarten graduation, class Olympics and end of the year parties which means that I have 30 minutes or less to prepare for dinner most nights. The kiddos tend to lean towards the more simple meals lately and I’m OK with that. The other night I prepared these simple Nacho Bites for our dinnertime meal. 

Simple Nacho Bites

Simple is best.

I can spend hours on a recipe and then the kids just push it around the plate begging for something else. My love for nachos stems from my childhood days. We would need something quick and easy for dinner, yet I felt like there was never enough to go around because we would swarm the chips layered with melting cheese as quickly as possible. My kids too have experienced nacho night but I decided to take it one step further with Athen’s Phyllo Shells.

Many people see these shells and assume they are just meant for pretty desserts. After months of working with Athens I’m hear to tell you that they can also replace your chips. Nacho night was perfect with these Nacho bites. 

Our new Mexican themed meal was put together in less than 10 minutes. It’s hard to beat 10 minutes for a crowd pleasing meal which means more time to spend with family. All you need is the phyllo baking shells, refried beans, shredded cheese and whatever toppings you desire. You could even make a nacho bar and everyone can customize things with their own additions.

Yield: 30 bites
Prep Time: 10 minutes
Cook Time: 6 minutes
Total Time: 16 minutes

Ingredients

  • 2 packages (15 count) Athens Mini Fillo Shells
  • 16 ounce can refried beans
  • 1 cup finely shredded Cheddar and Monterey Jack Cheese Blend
  • 1 jalapeno, sliced
  • 1 avocado, smashed into a bowl
  • 2 tablespoons chopped cilantro

Instructions

  1. Preheat oven to 350 degrees F.
  2. Add a little scoop of refried beans to each fillo shell. Top with a sprinkle of cheese.
  3. Bake in the oven for 6 minutes.

Top with additional toppings: jalapenos, avocado, sour cream, cilantro and salsa.
