Frittatas are perfect for breakfast or lunch. They are similar to omelets except that they are baked and no flipping which makes for a cleaner kitchen. ENJOY!
Ingredients:
6 lg eggs
1 cup milk
1/2 cup mushrooms
1/4 cup asparagus
6 bacon slices, cooked and crumbled
1 cup cheese, shredded
2 Tbsp butter, melted
1/4 tsp pepper
1/2 tsp sea salt
1/4 cup green onions, chopped
Preparation:
Preheat the oven to 350 degrees
In a large bowl beat the eggs, milk, butter, salt and pepper
Add the mushrooms and asparagus
Pour into 11X7 inch baking dish
Top with the green onions, bacon and cheese
Bake for 25-30 minutes, insert a butter knife and if it comes out clean the dish is done

I made something similar to this last night (no asparagus) and we cleaned out the dish in one sitting. I should have used asparagus, though…that sounds really good. Thanks for the idea!
I had an omelette at a fancy brunch place a few weeks ago with mushroom and asparagus, and it was just fabulous… love the idea of using those same flavours in a frittata instead, especially since it’s so much less fuss. Plus, everything’s always better if you add bacon. 🙂 Thanks for sharing!

I have the same baking dish, and for some reason I’ve NEVER thought of making a frittata in a baking dish. DUH. I always associate them with fry pans!
