  1. This looks delicious. I love that there is asparagus in it, and you’re so right – no omelet flipping makes for a much cleaner kitchen, at least when I’m cooking. 🙂

  4. I made something similar to this last night (no asparagus) and we cleaned out the dish in one sitting. I should have used asparagus, though…that sounds really good. Thanks for the idea!

    I had an omelette at a fancy brunch place a few weeks ago with mushroom and asparagus, and it was just fabulous… love the idea of using those same flavours in a frittata instead, especially since it’s so much less fuss. Plus, everything’s always better if you add bacon. 🙂 Thanks for sharing!

  6. I have the same baking dish, and for some reason I’ve NEVER thought of making a frittata in a baking dish. DUH. I always associate them with fry pans!
