Have you seen the show Fixer Upper on HGTV? To say I am slightly obsessed with this show would be an understatement. I love everything about the hosts down to the houses and decorations. I want a fixer upper.

Let me rephrase that last sentence. I ONLY want a fixer upper if it is completed and decorated by Chip and Joanna Gaines from the show. They turn ratty, crappy, fall apart homes into glorified homes that everyone would be happy with.

I love my current home but I want more space. I would love a larger kitchen painted all white, a bigger backyard that looks like a luscious green oasis and a bigger living room. I want to be able to show my children (no mom I’m not pregnant) what its like to grow fresh vegetables and herbs. Some days I want to raise chickens and other days I feel like I would never have the time. Fresh eggs, fresh chicken meat…. I would be one happy little cook. Just think this mozzarella and spinach stuffed chicken would have been easier to make if I had all that chicken meat lying around.

Of course, I’m just dreaming in my head because we are years from having a house that will complete all my wants and desires. We could find an old house but I can’t vision the finished outcome. I see what it has to offer and I’m usually turned away from older homes, but they are the ones with character and loads of fun memories.

Do you own a chicken coop or would you ever consider it? Please tell me the pros and cons.

Mozzarella and spinach stuffed chicken

Ingredients

  • 2 teaspoons extra virgin olive oil
  • 1.5 pounds boneless, skinless chicken thighs
  • salt and pepper to season
  • 1 1/2 cups baby spinach
  • 6 tablespoons shredded mozzarella cheese
  • 3 tablespoons balsamic vinegar

Instructions

Preheat oven to 400 degrees F.

Season the chicken on both sides with salt and pepper.  Spread each thigh out and in the center place 1/4 cup of spinach on each piece along with 1 tablespoon of cheese.  Fold up the sides of the chicken and secure with toothpicks.

Add olive oil to an iron skillet over medium heat.  Place the chicken in the skillet and sear on each side for 4 minutes.  Pour the balsamic vinegar over the chicken and place in the oven for 20 minutes or until internal temperatures reach 165 degrees F.
