I’m currently by the fire looking out gorgeous, huge windows and watching the snowfall down. The trees are starting to get weighed down by the snow and the mountain is now glistening of white. Best part of all is that I’m sitting with 6 other bloggers in Deer Valley, Utah for a girl’s weekend getaway trip. We’ve been planning this trip for some time and I think we all needed some girl time with each other.

There has been skiing, a whole lot of eating and drinking, plus lots of girl time sitting around the fire talking for hours on end about life.

Right before I left for this trip I was trying to win my daughter over and I baked her some mint chocolate chip cookies. She has probably forgotten who made them by now and has her dad wrapped around her little finger.

I still tried.

Mint Chocolate Chip Cookies

It’s a classic chocolate chip cookie recipe with a little added flavor of mint. I’ve been staring at the stuffed delightfulls for some time in the store and finally decided to try them out in this cookie recipe. You don’t have to worry about being overwhelmed with mint flavor because it is very subtle. If you want more of an actual green tint to the cookies by all means load up with the green food coloring but I just couldn’t get past adding more than 12 drops for the cookies.

Mint Chocolate Chip Cookies

Ingredients

  • 2 1/2 sticks unsalted butter, room temperature
  • 1 cup sugar
  • 1 cup dark brown sugar
  • 2 large eggs
  • 2 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups flour
  • 9 ounce package Delightfulls Dark Chocolate Morsels with mint filling
  • 1 cup semi-sweet chocolate chips
  • 10-12 drops green food coloring

Instructions

Preheat oven to 350 degrees F.

Cream the butter and sugar together until a smooth consistency.  Beat in the eggs and vanilla.  In a bowl combine baking soda, salt and flour.  Slowly incorporate it into the wet mixture.  Beat until all flour is mixed in.  Add mint chocolate morsels, chocolate chips and food coloring.  Beat or stir until well mixed.

Place spoonfuls of the cookie mixture onto parchment paper 2 inches apart and bake for 9-10 minutes.  Remove and allow to cool for 3 minutes before setting on a wire rack.

Tip: Add more green food coloring to make them a true green or you can leave the food coloring out.
