Mexican Turkey and Bean Pizza

Mexican! Pizza!  I love both so muchhhh.
What if I were to tell you that you could mix the two and create a wonderful dish that was even healthy. Yes, it is totally possible and I’m going to prove it!
I found a recipe on the Weight Watcher’s website a couple of weeks ago and decided to alter it to my taste. I made a couple of minor changes to original recipe and it worked perfectly. Shaun could not believe that this dish was originally a Weight Watcher’s recipe. Even though I’m calling it a Mexican pizza Shaun insists its a chalupa. Either way its a win-win! ENJOY!!!

Mexican Turkey and Bean Pizza

Yield: 4 servings

Instructions

Preheat oven to 425 degrees
Place corn tortillas on a baking sheet and place in oven for 6-8 minutes or until crisp
Heat a large non-stick skillet over med/high heat and add turkey
Break up the turkey meat with a wooden spoon
Add garlic, cumin and salt and stir
Cook about 6-8 minutes or until turkey is done
While that is cooking add beans and salsa in a small bowl and stir
In another bowl add tomatoes, avocado, lime juice, and cilantro and mix
To plate the pizza divide the bean mixture between the 4 corn tortillas
Then add the ground turkey and then top with a Tbsp of cheese on each pizza
Place bake in the oven for at least 3 minutes or until cheese is melted
Remove and top with 2 tsp of sour cream on each pizza and then top with the tomato and avocado mixture
