Spotify, Pandora or Amazon Streaming? Ten years ago I was all about my Pandora stations and then this year I moved on to Amazon streaming since I own an Alexa. However, my world changed yesterday when I downloaded Spotify. The playlists are SO MUCH better and I feel like it knows what I want to hear. After clicking through the different Mood channels I landed on Chill hits. It’s not the screaming in the shower hits but more of the laid back and work tunes.

Now that I have my new groove mix for work and cooking we can talk about these Low Carb Philly Cheesesteak Roll-Ups. Think about a Philly Cheesesteak sans the bread but just as good. Yes, I know it’s hard to believe but these Cheesesteak Roll-Ups are good for you and fun to make. They are easier to eat with a fork and knife instead of picking them up trying to bite into them. If your guests require a more hearty meal then toast some bread, place the meat on the bun and broil the cheese. However, let them know that these are just as good without all of those calories.

Low Carb Philly Cheesesteak Roll Ups

Low Carb Philly Cheesesteak Roll Ups

Yield: 6 servings

Ingredients

  • 2 teaspoons extra virgin olive oil
  • 7.5 ounces sliced white onion
  • 7 ounces sliced bell pepper
  • 1 pound (approximately 2 steaks)  boneless beef ribeye steak, fat trimmed off
  • 6 slices provolone cheese

Instructions

Pour olive oil into a skillet over medium heat. Stir in the onion and bell peppers. Saute for 10 minutes or until tender. Remove from heat and set aside. Slice the steak into thin pieces. Add 2-3 to the skillet and cook on medium heat for 2-3 minutes per side. Repeat until all steak has been cooked. Place a piece of cheese onto the center of the steak along with bell pepper and onion. Roll it all up and secure with a toothpick. (If you want melted cheese place back in the skillet for 30 seconds.)
