Sometimes I get so caught up in the hustle and bustle of little things that I never just take the time to sit back and relax. This past week I traveled to Michigan for some blog work. When I returned a day later than expected from my trip, I was exhausted.

I had five recipes due, freelance work, exhaustion and then to top it all off a sick toddler all before this past Friday. Two days plus the weekend to accomplish everything I needed to get done, but I realized that if I didn’t sit back and take some time for myself I too was about to be SICK. Thursday and Friday I caught up on some much needed nap time and reading.

Saturday was game day and I would be passing on my season ticket. I was going to make sure it was still GAME DAY central at our house and that meant I would break out the drinks and easy comfort food.

This past week I had received some Ragú® sauce in the mail. This was part of a campaign to turn classic recipes into a #newtradish. In easy terms…. turn two of your favorite dishes into one new recipe. I wanted to keep it simple and so I made a new recipe with a mix between baked ziti and lasagna. My no-boil noodles were key and definitely cut down on the cook time. If you prefer a lot of sauce in your pasta dishes then by all means use the whole bottle instead of 2 cups.

Broken lasagna casserole #newtradish

Easy lasagna noodle casserole

Yield: 9 servings
Prep Time: 8 minutes
Cook Time: 42 minutes
Total Time: 50 minutes

Ingredients

  • 1 pound lean ground beef
  • 4 ounces or 6 oven ready lasagna noodles, broken
  • 1/2 cup part skim ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese, divided
  • 1/2 teaspoon oregano leaves
  • salt and pepper to taste

Instructions

Preheat oven to 350 degrees F.

In a skillet brown the meat.  Pour the meat in a 9 by 9 inch baking dish.  Add broken noodles, Ragú® sauce, ricotta cheese, 3/4 cup mozzarella cheese and oregano leaves.  Stir until everything is well incorporated.

Cover tightly with foil and bake 30 minutes.  Remove and top with the rest of the cheese.  Place back in the oven uncovered for 12-15 minutes.  Season with salt and pepper.
