Key Lime Doughnuts
 
 
Hi there, A Zesty Bite friends! My name is Stephanie (from Girl Versus Dough) and I’m so honored to be guest posting on Meagan’s space here today so she can spend extra quality time with her family. When Meagan asked me to do a guest post on her blog, it took about T-minus negative 5 seconds to say yes, because I adore her blog and her delicious recipes (not going to lie, I’m still drooling over those Oreo Toffee Brownies of hers — OH MY YUM). Meagan is so sweet and kind and I’ve been so blessed to get to know her in this lovely blogging community, so I knew when she asked me to contribute that I had to make something sweet and comforting. Enter doughnuts.

Here’s the thing about doughnuts: They’re delicious, yes, but they’re also super easy to make. These doughnuts you see here took me less than a half-hour to go from idea to in my belly which, to me, is the best kind of doughnut. In some cases, this is dangerous news; in most cases, this is awesome news. Especially when those doughnuts are flavored like a key lime pie, as these are. True story.

I’ve made many a doughnut recipe before but I honestly think these are my favorite (don’t tell the others). The lime flavor rendered by juice and zest is strong enough that you know it’s there, but subtle enough to where it plays nicely with the glaze and the flaked coconut on top. I made my own buttermilk of sorts with key lime juice and milk to go into the batter, then sweetened it up a bit with some vanilla. Top it all off with a lime-kissed glaze (extra points if you swap the lime juice for rum in the glaze!) sprinkled with fresh lime zest and sweetened coconut and you’ve got one cheery breakfast — or snack or dessert or second breakfast — to enjoy.

Key Lime Doughnuts

Key Lime Doughnuts

Yield: 6 doughnuts

Ingredients

For the Doughnuts

  • 1/3 cup milk
  • 2 teaspoons key lime juice
  • 1 tablespoon butter, melted
  • 1/2 teaspoon vanilla
  • 1 large egg
  • 1 cup minus 2 tablespoons all-purpose flour
  • 2 tablespoons cornstarch
  • 1/3 cup plus 1 tablespoon granulated sugar
  • 1 teaspoon baking powder
  • Zest of 1 small lime, plus more as needed to garnish doughnuts
  • 1/2 teaspoon salt
  • Coconut flakes for garnish

For the Glaze

  • 1/2 cup powdered sugar
  • 1 tablespoon milk
  • 1 tablespoon key lime juice or rum

Instructions

Heat oven to 375 degrees F. Lightly grease a doughnut pan with cooking spray and set aside.

In a large bowl, whisk together milk and lime juice; let stand 5 minutes to create a “buttermilk.” Add butter, vanilla and egg and stir to combine.

In a separate bowl, whisk together flour, cornstarch, sugar, baking powder, lime zest and salt. Add dry ingredients to wet ingredients and stir to combine.

Pour batter into doughnut pan wells. Bake 10 minutes or until doughnuts are golden and spring back with lightly touched. Remove pan from oven; cool 1 minute before removing doughnuts from pan. Transfer doughnuts to a cooling rack to cool completely.

In a small bowl, whisk together powdered sugar, milk and lime juice to form a glaze (add more powdered sugar or milk as needed to achieve desired consistency). Gently spoon glaze over cooled doughnuts. Sprinkle with lime zest and coconut flakes. Doughnuts are best served the day they’re made.
