Starting a new healthy lifestyle doesn’t mean that you have to deprive yourself of the things that you love or enjoy. I shared these Keto Garlic Herb Bagels for when you want a sandwich or need a quick fix for breakfast. Now I’m sharing my “new” go to dessert for that mid-afternoon craving… Keto Chocolate Chip Cookies with pecans.

Learning to bake with new products that fit the Keto lifestyle requires patience and the urge to try and try again. I finally nailed it with these Keto Chocolate Chip Cookies. They are adapted from All Day I Dream About Food’s Keto Chocolate Chip Cookies. I had originally been using Erythritol but the cookies came back with a strong cooling effect and they didn’t taste right. It also could have been that I ran out of baking powder and quickly made my own for the first batch. After swapping out the Erythritol for Swerve and getting the rest of the ingredients in order this second batch came out just right.

Almost all my cookie recipes include espresso powder to bring out the chocolate flavors in the cookies. There is no way that I could exclude them from these keto cookies.

Keto Chocolate Chip Cookies with Pecans

Keto Chocolate Chip Cookies with Pecans

Yield: 30 cookies
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes

Ingredients

Instructions

  1. Preheat oven to 325 degrees F.
  2. In a bowl combine almond flour, coconut, baking powder, salt, and espresso powder. Set the bowl aside.
  3. In a large mixing bowl whip the butter and Swerve together until creamy. Beat in the vanilla and egg. Slowly incorporate the dry ingredient mixture. Beat for 1 minute or until everything is mixed well together. Stir in the chocolate chips and pecans.
  4. Line a baking sheet with parchment paper. Using a small cookie or ice cream scooper make 1-inch size balls and place on a baking sheet.
  5. Bake in the oven for 10 minutes or until lightly browned.
  6. Move to cooling racks for at least 15 minutes before serving.
