It was Saturday night and we finally had a couple of hours to make a getaway for a much-needed date night. The in-laws were watching the kids for an overnight sleepover and a babysitter was at the house watching the baby. We were off to enjoy a couple glasses of wine and eat a very late dinner. It’s funny how after each date night, we always talk about how it needs to happen more often. Weeks and months fly by and we still haven’t received a night on the town. So you can bet when we got the chance to do something Saturday night we jumped on it.

After arriving at the restaurant/wine bar, we sat down at the bar. Tucked away in the corner but just perfect to get drinks at a moments notice. Cheesy beer fondue was served and we swirled our skewers around in the dip while the bread got soaked. One bread basket down and another on its way while we waited for our burger to be made. Nothing like sharing a fancy burger while sipping on some fine wine. About an hour into the night, a group of 2 couples sat next to us. They were chatting away with the bartenders and talking cocktails.

We could see from a few chairs down some drinks being made with the apple crown. I started a quick conversation with the person next to me asking what they were ordering and what ingredients it had. After the whole group had got their rounds of drinks, we decided to order one for ourselves. So much for enjoying more wine we were sold with this new cocktail. Of course, I jotted down the list of ingredients and went to the store a couple of days later to make you this tasty Honey Rosemary Cocktail. Cheers!

Honey Rosemary Cocktail

Yield: 2 drinks

Ingredients

  • 1 tablespoon rosemary
  • 2 ounces honey
  • 3 ounces freshly squeezed lemon juice
  • 3 ounces Apple Crown
  • 1 ginger beer (may not use it all)
  • nugget ice

Instructions

In a cup muddle the rosemary.  Add honey, lemon juice and apple crown.  Shake with a shaker and then pour over two glasses filled with nugget ice.  Top it off with some ginger beer.

Add a sprig of rosemary for decoration.
