Is tomato sauce and goat cheese healthy? Tonight my answer is going to be yes. Maybe I splurged and went off the diet just a little bit but this was my main meal and the baguette pieces are tiny. Did I mention that I ate a very healthy lunch!
A couple of weekends ago we went to a tapas place here in Houston that served this dish and I fell in love instantly. I also don’t like goat cheese or so I thought. It goes perfectly with a garlic and olive oil baguette that’s been heated in the oven. This is my creation of the tapas dish. ENJOY!
Ingredients:
1 28 oz. can of San Marzano whole peeled tomatoes
1/2 tsp fine sea salt
1 Tbsp dried basil flakes
2 cloves garlic, minced
4 oz. goat cheese, sliced
Preparation:
Preheat oven to 375 degrees
In a food processor add the tomatoes and puree the mixture
Move to a large bowl and add salt, basil, and garlic
Stir the mixture well and pour evenly into 4 oven safe bowls
Place the 4 bowls on a baking sheet and slide into oven
Cook in oven for 5 minutes
Remove the pan and put oven at 425 degrees
Spread out the goat cheese between the 4 bowls and place in the center of the sauce
Cook for 25-30 minutes or until hot and bubbly
I absolutely love goat cheese! I never thought to combine it with a marinara sauce! I bet you this tasted wonderful! I will have to give this a try! I am always looking for new appetizers and snacks to put out when I’m hosting get-togethers!!
