Pizza on Halloween? Yes, because your kiddos are going to need to eat before they go on their sugar rush. Maybe this pizza is also for everyone staying in while the kids are out trick or treating. This pizza definitely comes in handy on a spooky Friday night.

When we lived in Houston I could go to the nearest pizza store and get fresh dough for pizza night. Since we have moved to Lubbock I’ve been turned away plenty of times for just the dough. Yes, I am lazy sometimes and just want to build the pizza with the dough complete.

I solve all of these issues today on the blog with this goat cheese, bacon and brussels sprout pizza. Yes, I did in fact add bacon to my pizza.

Did you know that Fleischmann’s Yeast has packets just for no knead pizza dough? You don’t even have to wait 10 minutes for the yeast to activate. I was sold! Now on to the creative aspect of this pizza…. the toppings. I was tired of the pepperoni or all veggie pizzas that we make all the time. It was time to step outside of the box and experiment with cheese and other items.

Shaun and I went to see The Judge this past week for date night. It was at an Alamo Drafthouse and after skimming the menu my eye caught the pizza selection. I immediately saw their brussels sprout pizza and was intrigued. I knew at that moment I to make this pizza.

Goat cheese, bacon and brussels sprout pizza

Goat cheese, bacon and brussels sprout pizza

Yield: 8 slices
Prep Time: 10 minutes
Cook Time: 13 minutes
Total Time: 23 minutes

Ingredients

  • 2 1/4 cup all purpose flour, divided
  • 1 envelope Fleischmann’s Pizza Yeast
  • 1 1/2 teaspoon sugar
  • 3/4 teaspoon salt
  • 2/3 cup warm water
  • 3 tablespoon extra virgin olive oil
  • 1 teaspoon extra virgin olive oil
  • 1 cup shredded mozzarella cheese
  • 3/4 cup brussels sprouts, trimmed and only leaves
  • 2 ounces goat cheese, torn into chunks
  • 1/4 cup shredded parmesan cheese
  • 4 cooked bacon slices, chopped

Instructions

Dough

Stir 1 cup flour. yeast packet, sugar and salt in a large bowl.  Add in the water and olive oil.  Mix together until well blended and then add 1 cup flour.  Keep mixing until the dough forms into a ball.  Add more flour if you need to.  Place the dough on a well floured space and kneed for 4 minutes or until smooth and elastic.  Roll the dough in a large circle and place on a pizza baking sheet.  Spread it out to ensure the dough reaches the edges of the pan.

Pizza

Preheat oven to 425 degrees F.

Spread the olive oil with a brush over the top of the pizza.  Poke holes with a fork all around the pizza to make sure it doesn’t get bubbles.  Sprinkle the mozzarella over the pizza leaving an inch border.  Then add brussels sprout leaves, goat cheese chunks and parmesan cheese.

Bake for 13 minutes or until bread is golden brown.  Top with cooked bacon crumbles.
