Garden party cocktail recipe located at bottom of post!
A little over a week ago Shaun and I hopped into the vehicle for a little romantic pre-anniversary trip to Sante Fe, New Mexico. When checking out hotels in the Santa Fe area we noticed that they had a Four Seasons resort that was not located in the main town square and it was secluded in the mountain area. Just what we wanted for our anniversary trip. Peace and quiet and boy did we get that during our two night stay.
The hotel is located on 57 acres of land between some foothills and 10 minutes from downtown Santa Fe. It boasts 65 casita guest rooms with patios or balconies. After going into our casita one of the first things I noticed besides the stocked bar was a ceiling fan going 90 to nothing. Coming from the Texas heat I could not have been more excited about a fan in the main room. The next best thing was the heated concrete floor in the bathroom. Talk about luxury and warm feet after a nice relaxing bath or shower. If the floors don’t bring enough heat then surely the fireplace will warm you up.
The following morning after in-room dining we met up with a guide from Adventure Partners for a morning hike. There were about 12 of us all ready for our 1 hour hike up the mountain right behind the resort. During that hike we learned a lot about Santa Fe and the surrounding communities that we could see. He also informed us about many things that the Adventure park has to offer all of the guests.

After our hike we took off towards the pool for some relaxation, drinks and of course some Vitamin D. I sipped or more like downed my garden party cocktail at the pool and I did my own version at the bottom of this post.
Located next to the pool is a workout facility and yoga/pilates studio but on this vacation hiking was the extent of my exercise activities. Not long after the pool trip we headed next door to the spa facility for a couples massage. Let me be the first to say that 50 minutes is never long enough and when will I learn when I book them that short.

Being a foodie we cook and eat out quite a bit. If I’m not creating recipes you can bet that I’m thinking about food non-stop. For dinner we were ate at Terra restaurant located on the property of Four Seasons. It is New Mexican and Southwestern cuisine showcasing fresh and local ingredients which some are grown right outside of the restaurant.
We had a 7 course meal and wine pairing and it included:
- Farm to table potato corn soup
- House salad with grilled peaches and candied pecans with citrus infused cheese
- Scallops with cauliflower and raisins
- Herb crusted bass with carrot and potatoes
- Quinoa crusted tuna
- Brined and then grilled pork with with arugula with spiced carrot puree and chutney
- Raspberry tart and chocolate mousse
While we were drooling over each and every course that was brought to us a group of people were dining in the kitchen. They call it the chef’s table. This group actually gets to partake in their involvement of the food and then get to sit down in the center of the kitchen to eat it.

Shaun and I got the chance to talk with the chef before our dinner and his love for food and his community definitely shines through him. The local schools have even started their own gardens and that has definitely inspired me to see what I can do in the local Lubbock area. Our meal and service at Terra for breakfast and dinner was phenomenal and highly recommend it to anyone who visits the Santa Fe area.
We enjoyed our stay at Four Seasons Resort Rancho Encantado and will definitely be back for more food and relaxation time.
