I’ve been holding on to this Farmers Market Salad recipe for quite some time. In fact, I kind of forgot about it until I was looking in my recipe notebook this past week and realized that I never posted it.

So here we are talking all things salad related.

This Farmers Market Salad is loaded with all of my favorites from tomatoes, zucchini, cucumber, olives, red onion and bread. Most farmer markets have several bread stations and it’s the perfect time to support your local community while taking in a few carbs. My family typically has to buy double the bread because the kids can put down a baguette or ciabatta loaf just while we are shopping for the vegetables.

Farmers Market Salad Recipe

This salad is crunchy and brings just a little bit of bite with the addition of the balsamic vinegar. You can add any dressing, olive oil that you like but there is something about balsamic vinegar over fresh uncooked vegetables.

The ingredients needed for this salad CAN BE found at your local store year-round. That means Farmers Market Salad can truly be enjoyed all the time. You can pair it with BBQ chicken, ribs, sandwiches, or just by itself. If you happen to be watching your carb intake just leave out the bread.

Farmers Market Salad

Total Time: 10 minutes

Ingredients

  • 2 1/2 cups chopped rustic bread (can substitute)
  • 2 large tomatoes, chopped into large pieces
  • 1 zucchini, sliced
  • 1 cucumber, sliced
  • 6 ounce can black medium olives, drained
  • 2/3 cup diced red onion
  • 1/3 cup extra virgin olive oil
  • balsamic vinegar to drizzle
  • salt and pepper to taste

Instructions

Add all ingredients into a bowl and stir. Serve cold.
