Elbow Noodle Fideua
Adapted from Veggie Grettie
Ingredients:
2 Tbsp olive oil
4 oz. elbow noodles
3/4 cup onion, chopped
1 cup mushrooms, sliced
8 oz. lean ground beef
1/2 red bell pepper, cut into chunks
2 Tbsp fresh parsley, chopped
1 garlic clove, minced
1/2 tsp paprika
4 oz. tomato sauce
1 cup beef broth
4 oz. fresh asparagus, chopped into 1 inch pieces
1/2 cup water
salt and pepper to taste
Preparation:
Heat 1 Tbsp of oil in wok or large skillet pan on medium heat
Add the noodles and stir constantly for 3-4 minutes
Transfer the noodles to a paper towel to allow them to dry
Add the remaining olive oil to the pan along with the onions
Cook for 4 minutes and then add mushrooms, bell pepper, beef, parsley, garlic and paprika
Cook for additional 7 minutes and stir occasionally
Then add in the tomato sauce along with noodles, broth and water
Season with salt and pepper
Simmer over low/medium heat for 5 minutes and add asparagus
Cover the wok or skillet and simmer for an additional 20 minutes or until pasta is cooked; stir frequently
Preheat oven to broil
Place the mixture into a 9 inch round cake pan and place in oven for 3-4 minutes
Do not let it burn you just want the top crisp
Take out and serve immediately
