Breakfast is the most important meal and that basically gets inscribed in our brains at such an early age. It’s the fuel our body needs to get us going and on the right track to function at our best each day. Most mornings consist of eating leftover breakfast casserole, toast with avocado, cereal, donuts or some eggs with bacon.
This easy Egg in a Mug Breakfast recipe is for those wanting a complete breakfast but in a fraction of time. Consider it an omelet in 1 minute and you can even make it at work in the microwave. That is if they allow you to eat at your desk but I know a lot of companies that don’t mind.
I combined some of my favorite ingredients for this egg in a mug recipe. I must start out with bacon because it’s one of my favorites. Nothing beats a crispy slice or two in the mornings. Then it’s off to eggs, bell pepper, spinach and of course some cheese. Now you can add your own favorite ingredients or even swap out the bacon for sausage.

Egg in a Mug
- 1 strip precooked bacon, chopped
- 1 large egg
- 1 tablespoon water
- 2 tablespoons diced bell pepper
- 1/4 cup baby spinach
- 1 tablespoon shredded mild cheddar cheese
- Sprinkle of salt and pepper
Spray the mug to coat the inside.
Whisk the egg and water together and then pour into the mug. Add the rest of the ingredients and stir.
Place into the microwave for 30 seconds and then stir. Place back in the microwave for an additional 30 seconds.
